'Tis the season for baking!!! Impress your guests with the best pumpkin desserts!! My family goes crazy over these recipes!! These are also such easy recipes that even my husband and kids have made them!

I do prefer to use fresh pumpkin, but if you are not one to can your own, the store bought canned pumpkin will work just as well.

Pumpkin Bread: makes 2 loafs

  • 3 1/2 c. flour
  • 3 c. sugar
  • 2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 3 eggs
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ground cloves
  • 1 c. oil
  • 2 c. pumpkin

With electric mixer, mix all ingredients together in mixing bowl until smooth. Divide batter into 2 bread loaf pans and bake at 350* for 50-60 min. or until cake tester comes out clean. Very easy and very delicious!! Great served warm or cool.

Pumpkin Pie: makes 1-9" pie

  • 2 eggs
  • 1 lb. fresh or canned pumpkin
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. ground cloves
  • 13 oz. evaporated milk
  • 1-9" pie shell

Mix all ingredients together until smooth and then pour into pie shell. If using fresh pumpkin, the batter will be thinner. Bake at 425* for 15 min. and then at 350* for approx. 45 min. or until cake tester comes out clean. Cool and ENJOY!!

The Best Pumpkin Roll: Makes 1 roll.

  • 3/4 c. flour
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. allspice
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin (fresh or canned)

Mix all ingredients together until smooth and pour into greased jelly roll pan. Bake at 350* for 8-12 min. or just until cake tester comes out clean. While baking, dampen a clean towel and lay flat on table and sprinkle some powdered sugar on the towel. When roll is baked, immediately flip onto damp towel and roll up. Let cool completely while mixing filling.

  • 1 c. 10x sugar
  • 8 oz. pkg. cream cheese
  • 6 Tbls. butter
  • 1 tsp. vanilla

Mix filling well, unroll the roll when cooled and spread filling inside. Roll back up slowly while pulling away from the towel. Refrigerate until ready to serve. Sift powdered sugar on top before serving if desired.

In response to Jami's question, as my pastry chef teacher always used to say, "A pint is a pound and the world is round." A pint is 2 cups which equals 1 pound. As long as you remember that one pint is 2 cups, the saying is hard to forget no matter how silly it sounds. It has stuck with me for 10 years. I hope this was helpful Jami.
